EGGPLANT BALLS WITH BALSAMIC VINEGAR

IN AIR FRYER (IF YOU LIKE)
Easy, quick and irresistible! These eggplant balls are an incredible lunch and dinner saver. If you love eggplant you will love these balls.

INGREDIENTS
2 eggplants
1 egg
qb salt
100gr breadcrumbs
100gr Parmesan cheese
3 tablespoons Balsamic Via Cervetta 30 (buy it here)
PREPARATION TIME
35 minutes
COOKING TIME
15 minutes
Bake the whole eggplants in an air fryer at 190 degrees for 25 minutes. Alternatively, the eggplants can be baked in the oven.
Peel them [1] and place the pulp in a fairly large boule. Add an egg, a pinch of salt and the breadcrumbs. Mix well and blend the ingredients together [2]. Then add the grated Parmesan cheese and 3 tablespoons of Balsamic Via Cervetta 30. Mix again.
Form the balls and coat them with breadcrumbs [3].

Bake in an air fryer at 200 degrees for 15 minutes, until golden and crisp. They can also be cooked in a frying pan with plenty of oil or in a ventilated oven.
Serve warm with a drizzle of Balsamic Via Cervetta 30 [4-5-6].
