TOFU CROQUETTES WITH BALSAMIC MAYO

These croquettes will really make everyone fall in love!

INGREDIENTS
For the croquettes
300 g natural tofu
3 tablespoons of Evo oil
2 tablespoons soy sauce
4 sun-dried tomatoes
Juice of half a lemon
1 tablespoon pitted olives
qb fresh parsley
70 g breadcrumbs
1 drizzle of Balsamic Via Cervetta 30 (buy it here)
For the sauce
3 tablespoons mayonnaise
1 tablespoon Balsamic Via Cervetta 30 (buy it here)

Dry the tofu [1], crumble it in the blender together with 3 tablespoons of Evo oil and 2 tablespoons of soy sauce [2]. Then add 4 sun-dried tomatoes, the juice of half a lemon, a tablespoon of pitted olives and a few parsley leaves [3].

Blend well [4] and transfer the mixture to a larger bowl. Then add the breadcrumbs and mix [5]. Form the croquettes [6] and bake in an air fryer for 10 minutes, remembering to turn them occasionally.

For the mayo. Place 3 spoons of mayonnaise in a container and add a tablespoon of Balsamico Via Cervetta 30 and mix well [7].
Strain the croquettes and garnish with a drizzle of Balsamico Via Cervetta 30 [8-9]. Serve them still warm along with the Balsamic mayo.
